What are sufganiyot exactly? Great question. Sufganiyot are fried, jelly-filled doughnuts that are among many oily foods eaten in celebration of a Hanukkah. Fried foods are common in many Hanukkah meals to commemorate the “festival of lights,” where enough oil for one night of a candle burning lasted for eight days.
